Post12- carbonara sauce

For this version of carbonara sauce, you’ll need egg yolks, pancetta, peas, parmesan cheese, cream, and butter.

  1. Cook and set aside your pasta.
  2. Saute the pancetta in the butter until crispy.
  3. In a separate bowl, mix the egg yolks, cheese, and a little cream or milk.
  4. On medium heat, add the peas and some pasta water to the pancetta.
  5. Scoop the pasta into the pan with the pancetta and mix.
  6. Turn the temperature on low and pour in the egg mixture, stirring until the pasta is fully coated.
