Stuffed Bell Peppers

Ingredients:

  • 4 bell peppers, tops cut off and seeds removed
  • 1 lb. ground beef
  • 1 cup cooked rice
  • 1/2 cup tomato sauce
  • 1/2 cup shredded cheese
  • Salt and pepper
  • 1 tbsp olive oil

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
  3. Stir in cooked rice, tomato sauce, and cheese. Season with salt and pepper.
  4. Stuff each bell pepper with the beef mixture and place in a baking dish.
  5. Cover with foil and bake for 25-30 minutes. Remove foil and bake for an additional 10 minutes.
