M18 Edisi Musim Panas Makanan Laut (1)

1: Cuci gurita, abalon, tiram, udang, dan kerang, lalu potong abalon kotak-kotak. Masukkan 3 iris jahe, 1 genggam daun bawang, dan setengah mangkuk arak masak ke dalam panci berisi air dingin, didihkan dengan api besar, lalu lanjutkan memasak selama 2 hingga 3 menit.

 

2: Angkat makanan laut dan rendam dalam air es. Tiriskan dan sisihkan setelah benar-benar dingin.

 

3: Untuk saus pedas: ½ mangkuk bawang putih cincang, ½ mangkuk daun bawang cincang, ½ mangkuk cabai rawit, ½ mangkuk daun ketumbar yang dilumuri dengan 1 mangkuk minyak panas. Tambahkan ½ mangkuk cuka balsamic, 1 mangkuk kecap asin, ½ mangkuk kecap asin hitam, ¼ mangkuk saus tiram, ½ mangkuk air perasan lemon, 4 irisan lemon, 1 sendok makan garam, 1 sendok makan biji wijen matang, ½ mangkuk mi cabai, dan 1 mangkuk air putih, lalu aduk rata.

4: Tuangkan saus ke dalam makanan laut dan dinginkan hingga terendam selama 1 jam.

    If you don't have cooking wine you can replace by white wine or ginger wine.
