Sweet rocket (Hesperis Matronalis, also known as Dame's-violet) are biennials or short-lived perennials, spring-blooming flowers. In some of the areas, it has escaped from cultivation and become a weed species. The flowers' fragrance is as sweet as a violet's, and most pronounced in the evening. Their perfume will fill the air late spring and early summer evenings.
Rich in vitamin C, they are used as a cress substitute in salads. A rather bitter flavour, though many people like the extra tang it gives to salads. For culinary purposes, the leaves should be picked before the plant flowers. The seed can be sprouted and added to salads.
