FWIW, we both have inflatable boards. They are about 11 feet long and are very stable and good for beginners.
My wife and I went paddle-boarding this past weekend. It was out first time this summer.
As always, it was a great experience. We spent a couple of hours out on the water, just relaxing and taking in the views.

If you decide to go with an inflatable board, may I suggest an electric pump? A good one can be preset to whatever pressure you need it to go to (mine is 15lbs) and can handle more than one board before it needs to cool down.
