Hunting at Roadside IV #5

Serbian Bellflower, also known as Blue Waterfall, is a perenial plant. It produces beautiful star-shaped lavender blue flowers that spread out relatively richly. This variety flowers very abundantly over a relatively long period.

Both the leaves and flowers are edible and can be used in salads. The leaves and young shoots are high in vitamin C and mild in flavour, and the roots are edible raw or cooked.
