If the protein content of rice is 6-8%, durum wheat is 13-16%. Protein is considered the key to dieting because it has a high satiety ratio compared to the calories.  Even on a keto diet, you will be able to succeed more easily if you eat a moderate amount of good carbohydrates, such as pasta, rather than completely cutting out carbohydrates.
