The sunchoke grew every year in our vegetable garden since we started in 1916 with a handsome seedlings from a friend of our family in the west USA. One year it was too much and grew very tall, we had difficulty to pull out. Now, this year the ones somewhat migrated to the next door neighbor, migrated back to us within our fence and grew this much.
It has many nutritious facts, such as high in fiver and protein. A good source of iron, magnesium, potassium, and calcium. It is low in carbohydrate. You may guess what it is good for in addition to lowering blood pressure, and decreasing blood cholesterol.
Oh, it also contains insulin. This might cause digestive problems for some people.
